Last Wednesday I took Miles to Cornbelly's for the fourth and final time for the year. It was freezing, and rainy, and cold, and wet, and drizzley, and frigid, and miserable weather. Did I mention that it was wet and cold? Did the weather bother Miles? Not in the least. He had a great time doing everything that he likes at Cornbellys while I was desperate for him to get bored or cold and want to leave. The only good thing about Cornbelly's on a nasty weather day was that the place was deserted so Miles didn't have to wait in line. After 2 hours, Miles agreed to go home. He loved, loved Cornbelly's.
I did take my favorite Cornbelly's picture on Wednesday. It's of Miles in the rat maze peering out the plexiglass window (while I was trying not to think about how many different bacteria, viruses, etc. that he happily exposed himself to...

Hi-Jacked Birthday
Yesterday was my birthday. Yipee. Birthdays aren't so cool as the number keeps getting bigger. Miles, however, was stoked about my birthday to the point that he took it over. He was happy to blow out candles on my behalf. He loved presents. He especially loved the "wand of power" that I got for my birthday (better known as a hand held shower head). Miles saw the "wand of power" and removed it from the packaging and ran off with it to the bathroom insisting that it was immediately installed, then he took the first shower with it. Yep, I was upstaged!

Fennel and Potato Bake
I really like fennel. Unfortunately, it's quite expensive so I rarely eat it. On Saturday, I picked up my Bountiful Basket and was so excited to see 2 "things" of fennel in it! Tonight I cooked it us and it was so good. So I don't lose the recipe...
Fennel and Potato Bake
Cut in half and core 2 Fennel Bulbs, then thinly slice the fennel
Peel and cut thinly about 2# of Potatoes
Get out an 8" (or 9") square baking dish. Put about a third of the potatoes in the bottom. Put half the fennel on top. Sprinkle a thin layer of Asiago Cheese over it. Salt & Pepper. Repeat the process. Put on the last layer of potatoes. Dump 1/2 C Cream over the top. Bake at 400 for 45 minutes. Remove from oven and top with 1/2 C Asiago Cheese. Bake for 15 more minutes.

Cornbelly's Again (and Again...)
Cornbelly's is starting to feel like me movie Groundhog Day... it's the same thing every time. The bonus was that this time, Dan came along. He got to experience the "cow train".
Miles also had another great time in the "corn box" because his daddy was more than happy to completely bury Miles in the corn.
After 2 1/2 hours, Miles was not ready (but agreeable) to leave. I think he'll get one more Cornbelly's trip in before it closes.
